WHY ARE WE IN THE RESTAURANT BUSINESS??!!

4 essentials to exist in the restaurant business:
First: Good food means fresh, well prepared, well presented, properly portioned with variety and consisted accuracy.

Second: The dining environment must have an ambiance that enhances the dining experience that radiates clean, healthy and fresh fragrance.

Third: Service must be EXEMPLARY!  Neither too invisible nor too intrusive.  It must be ‘fast’ to show attention to the guest, but not rushed once served.

Fourth: The staff, both ‘front-of-the-house’ and ‘back-of-the-house’ must be knowledgeable, polite, gracious and courteous, attentive to detail, professional in dress and demeanor.
Stand sharp -look sharp -be sharp! And above all, BE PROUD!

In this business there is no excuse for an ‘off shift’. You must be ‘on’ on every shift, every day, without exception!
